Beyond Peas and Carrots: Chartwells Adds Vegetarian Options

Triticale, bulghur, quinoa, millet, polenta?these words are part of Chartwells' growing vocabulary and only a sample of the diverse ingredients found in the vegetarian entrees joining its menu. Since the Olympic Break, Chartwells has tripled the number of vegetarian options provided at the U.

Gerontology Center Celebrates 30 Years

The Gerontology Center is celebrating 30 years at the U with a party and open house on April 27 in the Union Ballroom. The Gerontology Center is unique among academic units at the U because it is university-wide and perhaps the most multi-disciplinary program at the U, with representatives from art to zoology.

Regents Want to Cap Enrollment

PRICE?To protect the quality of Utah's colleges and universities, higher education officials discussed a financial plan that would cap enrollment at many schools at the state Board of Regents meeting on Friday. Regents plan to discuss the proposal in greater detail in May, but three presidents of state institutions, including U President Bernie Machen, agree enthusiastically to the plan.

Johnson Steps Down as Board Of Regents Chairman

Johnson announced he would step down Friday, at the Regents meeting at the College of Eastern Utah. Serving for four years, Johnson is the seasoned veteran of a relatively new board?six of the 16 Regents were appointed just last year.

The chance to take second place was at hand for the U baseball team heading into the first game of the UNLV series. BYU had been swept by San Diego State and had nine conference losses, and if the Utes were to sweep UNLV, then they would overtake the Cougars for second place.

Softball Sweeps Past UNLV, Ends League Season

Traci Keller hit her first career home run for the U softball team, and it couldn't have come at a better time. Trailing 5-4 in the second game of a marathon doubleheader against UNLV, Keller got up to bat in the bottom of the 10th inning. Keller's solo shot tied the score and kept Utah in the game.

Women’s Tennis Routed by Boise

Heading into the Mountain West Conference Championships with some momentum was the goal for the U women's tennis team. However, the Utes could not come up with the victory against non-conference Boise State. The No.-49 ranked Boise State Broncos closed out an amazing season with a 6-1 win over the Utes to increase their record to 20-3.
